In a small pan on a stove in Madrid or Asturias, the fat from seared solomillo sizzles, and cooks add a pinch of green pepper — and the air fills with a pungent, slightly fruity aroma that instantly transports you to an era when this sauce was the king of Parisian restaurants.
The history of salsa a la pimienta goes back to the Middle Ages, when black pepper (Piper nigrum) was valued as highly as gold and served not only as a seasoning but also as a symbol of wealth. Over time, in the era of Auguste Escoffier, it acquired a creamy texture thanks to cream and cognac, and in the 1930s in Paris, steak au poivre was born — a steak with a crust of crushed pepper, topped with a sauce made from meat juices and cream.
In Spain, the sauce experienced a rise in the 1970s–1980s, and then fell due to cheap industrial versions. Today it is returning thanks to interest in French cuisine and comfort food: at Casa Neutrale Bar in Madrid's Chamberí, solomillo with salsa has become a signature dish for a young audience, and at Marzeah Taberna it is served as tacos with fermented pepper.
In Asturias, at Navaja Concept in Candás, chef Nel Castelo prepares the sauce from scratch: he finely chops shallots, adds Chinese five-spice blend and green pepper from Black Pepper & Co., simmers it in amontillado, pours in heavy cream, reduces without thickeners, then blends and strains to a velvety texture. For seafood dishes he uses fish stock, for meat — meat stock.
The revival is linked to the rejection of ready-made products and a return to manual work: reductions, simmering, and precise pan work. This is not nostalgia, but a search for authentic flavor in an era when people are tired of industrial substitutes.
To try the real version, it is worth visiting a bistro like Casa Neutrale Bar or Navaja Concept in autumn, when fresh pepper and local cream are at their most vibrant; in Madrid — at Marzeah Taberna in taco form.
This sauce reminds us that flavor is born not from ingredients alone, but from patience and respect for old techniques that still do not need radical updating.
