Scott John-Hodgson stands at the stove in the Solstice restaurant on Newcastle's quayside, where he recently took up the post of executive chef. His hands move with a precision honed over years: he checks the texture of a sauce, adds a pinch of sea salt to bring out the flavour of local seafood and vegetables from the surrounding countryside.

The North East of England, with its harsh climate, its closeness to the North Sea and its fertile valleys, shapes a distinctive character of cuisine. Here the cool sea air and mineral-rich soils give vegetables and herbs a vivid freshness, while fish and shellfish retain a firm texture and a clean flavour that is hard to replicate in other regions.

John-Hodgson works under the guidance of Kenny Atkinson, owner of two Michelin-starred restaurants — Solstice and House of Tides. This summer the chef was promoted and now oversees both establishments. His path to the final of National Chef of the Year began with the semi-final, where he demonstrated creativity, technical skill and the ability to work under pressure.

The organisers of the competition, from the Craft Guild of Chefs, selected just ten finalists from hundreds of entrants. In the final on 6 October in London, at the Le Cordon Bleu school, they will cook against the clock before a strict panel of judges assessing taste, presentation and consistency of the result.

The chair of the judging panel, Mark Birchall, advises the finalists to keep things simple and focus on flavour rather than complicating their dishes. The competition director, David Mulcahy, notes that reaching the final is an outstanding achievement that demands exceptional dedication.

North-eastern cuisine is gaining recognition on the national stage.
