Preparation is simple: after working the dough and letting it rest in the refrigerator for a couple of hours, it is wrapped around the frozen filling.   • In a bowl, mix the cream cheese with the sugar until the latter has dissolved.

  • Form many round discs of 2 cm each and then freeze them on a tray covered with parchment paper.

Cookie preparation:

  • In a bowl, mix the flour with the cocoa powder, baking soda, baking powder and salt and keep this mix aside.

  • Put the butter, granulated sugar and brown sugar in a planetary mixer and work the ingredients until you have obtained a homogeneous mixture.

  • Add the egg, egg yolk, food coloring, vanilla essence and vinegar and continue to mix.

  • Add the flour mixture and knead everything with the help of a spatula. Be sure to mix well, always make sure that the dough is well blended.

  • Wrap the dough in plastic wrap and place it in the refrigerator for at least a couple of hours, until it has become firm.

  • Preheat the oven to 175°C and, in the meantime, line a baking sheet with baking paper.

  • Take the dough out of the fridge and form balls of about 30 g each.

  • Gently flatten each portion of dough and, inside, place a frozen cheese ball.

  • Close the cookies and give each one a round shape.

  • Arrange them on the baking sheet 4 cm apart from each other and bake them in the preheated oven for 14 minutes at 175°C.

  • Carefully remove the cookies from the oven and transfer them to a wire rack so that they can cool.

  • Once cold, share them with the person you love and, if any remain, store the remaining ones in an airtight container.
