Zucchini is a versatile vegetable, perfect for quick meals and side dishes.

Here are five simple recipes to enrich your summer meals.

1. Grilled Zucchini with Herbs: Slice zucchini into 1/4-inch thick rounds. Toss with olive oil, salt, pepper, and your favorite herbs (such as oregano, basil, or thyme). Grill over medium heat for 2-3 minutes per side, or until tender and slightly charred.

2. Baked Zucchini: Cut zucchini into halves or quarters lengthwise. Drizzle with olive oil, season with salt, pepper, and garlic powder. Bake at 375°F (190°C) for 20-25 minutes, or until tender.

3. Crispy Zucchini Chips: Slice zucchini into thin rounds. Toss with olive oil, salt, pepper, and breadcrumbs (or panko for extra crispiness). Bake at 400°F (200°C) for 15-20 minutes, flipping halfway through, until golden and crispy.

4. Zucchini and Cheese Omelet: Sauté diced zucchini in a pan with a little olive oil until softened. Whisk eggs with salt and pepper. Pour the eggs over the zucchini, sprinkle with grated cheese (such as cheddar or mozzarella), and cook until the eggs are set.
