Irish potato farls, also known as fadge, are a traditional dish often served for breakfast or as a snack. This recipe provides detailed instructions on how to make them.
Ingredients:
1 kg potatoes, peeled and quartered
50g butter, plus extra for frying
100g plain flour, plus extra for dusting
Salt and pepper to taste
Instructions:
Boil the potatoes in salted water until tender, about 15-20 minutes. Drain well and mash until smooth.
Add the butter, flour, salt, and pepper to the mashed potatoes. Mix well until a dough forms.
Turn the dough out onto a lightly floured surface. Roll it out to about 1cm thick.
Cut the dough into a circle, then cut the circle into four equal parts (farls).
Heat a lightly buttered griddle or frying pan over medium heat.
Cook the farls for 3-4 minutes on each side, until golden brown and cooked through.
Serve warm with butter or your favorite toppings.
