The industry is characterized by its geographical dispersion and diversity in offerings, catering to various market segments from high-end to budget-friendly options.

Delivery services play a crucial role, with some restaurants reporting that up to 90% of their sales come from delivery platforms like PedidosYa, Rappi, or Uber Eats.

Leading the market is Niu Sushi, which has become the fourth largest chain in the country, following McDonald's, Papa John's, and Doggis. Niu Sushi has doubled its sales from 2019 to 2022 and has expanded internationally with locations in Mexico City.

Another significant player is Kami Sushi, which has the most locations in Chile but operates smaller establishments focused primarily on delivery.
