Ajmokac, also known as červiš, is a nearly forgotten Serbian dish featuring chicken in a garlic sauce. While similar, červiš boasts a thicker sauce. The dish involves simmering chicken in water to create a broth, shredding the cooled chicken, and preparing a garlic-infused roux. Chicken broth is added to the roux until the mixture thickens, then seasoned with pepper. More flour is added for the desired consistency, and finally, the shredded chicken is incorporated. Červiš is believed to have originated in the Middle East, becoming a traditional dish in the Šumadija region of Serbia, while the name Ajmokac is more common in southern Serbia.
