The fastest cookies that are also exquisitely delicious-1

There are recipes that save the day. When guests are already at the door, when you want something homemade and sweet "right now," when you can't be bothered to fuss with dough and wait a long time. It is precisely for such moments that there exists a cookie that is made faster than you can boil the kettle, yet tastes as if it came from a fine pastry shop.

We are talking about cookies that can be made in 15–20 minutes from idea to the first warm little piece on the plate. No lengthy chilling of the dough, no complicated equipment, and no long baking. And yet — with character.

Why it works

The secret to the speed lies in the minimal number of ingredients and the right technique. The dough is mixed literally in a minute or two, rolled out (or simply shaped by hand), and just 8–10 minutes later it is ready in the oven. And the refinement comes from a few thoughtful details: good butter, a pinch of sea salt, quality vanilla extract, and, if desired, a delicate accent — zest, nuts, or chocolate.

This is not "just cookies made from whatever was on hand." These are cookies you want to eat slowly, washing them down with tea or coffee, noticing the crispy edges and the soft center.

Recipe for the fastest exquisite cookies

Makes 18–20 pieces

Ingredients:

- 100 g butter at room temperature (preferably 82,5 %)

- 50 g powdered sugar (or very fine sugar)

- 1 egg yolk

- 1 tsp vanilla extract (or the seeds of ½ vanilla pod)

- a pinch of sea salt

- 130–140 g top-grade flour

- optional: zest of ½ lemon or orange, 30–40 g dark chocolate in pieces, a handful of chopped nuts (hazelnuts, almonds)

How to make:

1. Rub the butter with the powdered sugar until a light creamy mass forms. Add the yolk, vanilla, and salt. Mix quickly.

2. Sift in the flour. Knead a soft but not sticky dough. If you are adding zest or nuts, incorporate them now. Work quickly, do not knead for long.

3. Immediately roll the dough between two sheets of parchment to a thickness of 4–5 mm (or form balls and press them down lightly). Cut out cookies with any shape or simply slice with a knife.

4. Transfer to a baking sheet. If you like, sprinkle lightly with coarse sea salt or place a small piece of chocolate on top.

5. Bake in an oven preheated to 180 °C for 8–11 minutes. The edges should turn lightly golden, while the center should still remain pale. The cookies will finish setting on the baking sheet.

Done. The aroma is already so good that it's hard to wait for them to cool completely.

Little secrets of flavor

- Sea salt in the dough and on top is what turns a simple shortbread cookie into "the one." The salty accent makes the sweetness deeper and more refined.

- Vanilla is best when real. Even half a pod changes everything.

- The butter must be good. Cheap margarine will immediately give itself away here.

- Don't overbake. A slightly underbaked cookie with a soft center is far more interesting than a dry one.

More variations:

- Chocolate: add 15 g of cocoa in place of some of the flour and pieces of dark chocolate.

- Nut: replace 30 g of flour with finely ground almonds or hazelnuts.

- Citrus: zest + a little lemon or orange juice in the dough.

- With rosemary: just a little fresh rosemary (literally a few needles) and sea salt — for those who like savory accents.

These cookies don't claim the title of "the most complicated." They claim something else: to be that quick solution that isn't embarrassing to serve even to demanding guests. Crisp, aromatic, with the right balance of sweetness and salt, and ready before you can even set the table.

Sometimes the most exquisite things come out precisely when we don't overcomplicate.
